With three limited seatings only, the ‘S.M.A Vertical’ is focused on exploring sensory attributes of coffee, enabled by different approaches in technique and heat application during roasting.

Using one single origin coffee per seating, we will examine three different sensory aspects across three courses - Sweetness (S), Mouthfeel (M) and Acidity (A).
